Now that summer is here in the northern hemisphere, I suggest this potato salad, very refreshing.
Ingredients for four people:
¤ 8 large potatoes
¤ 4 carrots
¤ 400 g of green beans (can be frozen)
¤ 200 g green peas (can be frozen)
¤ 4 boiled eggs
¤ 2 cans tuna in olive oil,
¤ anchovy stuffed olives
¤ black olives
¤ 2 tomatoes
¤ 5 pickles (optional )
¤ Capers (optional)
¤ 2 L of water
¤ 1 tablespoon salt
¤ 1 egg
¤ 300 ml olive oil
How to make the recipe:
Put water and salt in a large pot on the fire. Peel and clean potatoes. Cut them small squares. Book. Peel and clean carrots. Cut them small squares. Book. Arrange the green beans and cut them small. Same with peas. Book
When the water in the pot boils, add potatoes and carrots. Boil about 15 minutes. Add green beans and peas. Boil about 10 minutes. Take everything and put it in a large colander. Cool and put in a large platter.
Meanwhile, peel the boiled eggs. Cut two squares and toss in the pan. Open the cans of tuna, drain the oil and reserve. Put the tuna in the pan with remaining ingredients. Slice the cucumbers very small and add along with everything else.
Make a homemade mayonnaise: Place a raw egg in the bowl of a mixer. Enter the arm a blender and cover the bottom of the blades, oil and nothing unturned to arm a few seconds to start, go slowly pouring oil while whisking and emulsifying goes mayonnaise. When it is thick, add a little salt and the juice of half a lemon. Continue beating and adding more oil slowly, until you have enough mayonnaise.
Put half of the mayonnaise with other ingredients in the pan and move around until blended. Pour the remainder of mayonnaise on top and spread. Garnish with boiled eggs cut the other into thin slices, olives, tomatoes, capers and so on. And put in the refrigerator until ready to eat.
Note: You can use olive oil Tuna mayonnaise.
