The times of levado mass are calculated at an ambient temperature of 22 / 25th, if outside minor I recommend letting them weigh more time, until they double the volume.
Always utilize the function turbo / air baking bread.
-280/300 GRMS. (heavy on the Th) of rice water
-500 GRMS. Flour (mark Gallo)
-1 teaspoon or more of olive oil
-1 teaspoon salt
-1 spoonful of sugar
-1 envelope of yeast Baker cornstarch
Put in Th rice water, salt, oil and sugar Schedule 3 minutes, 2 speed, temperature 40 degrees.
Add the flour and yeast, mix 30 seconds at speed 2, then put in knead 4 minutes.
Leave well covered glass with a plastic bag and a blanket for an hour.
Remove the mass of the glass and remove the air (I do it on a wooden board so not cool), back cover and leave about 10 minutes.
This past time give form of rolls with well enharinadas hands, place them in a dish of oven upholstered with special baking paper or Teflon plate, give them a few not very deep with the Scissor cuts and leave them well covered another 45 minutes.
Preheat the oven to 180 degrees before putting them spray them with water.
Bake about 15/18 minutes (this depends on the oven).
