Roasted peppers or “aubergine” I love and now that summer is almost here, it’s time to prepare. As eaten cold, you can bring a picnic or have dinner prepared in advance.
Ingredients for two people:
¤ 4 large red peppers
¤ 2 eggplants (optional)
¤ 2 tomatoes (optional)
¤ 2 cloves of raw garlic minced (optional)
¤ Olive oil
¤ Salt
How to make the recipe:
Clean and dry vegetables. Put them in the steamy and go manual or electric grilling on all sides. (The skin has to be nearly burned). Allow to cool.
Peel the peppers and eggplants and tomatoes if you have chosen for them. Make strips and place in a bowl. Add oil, salt and garlic, if you have opted for it. Remove and refrigerate until ready to consume them.
Note: It is eaten with bread, better integrated. They very well against constipation.
