For 2 people:
¤ 4-6 tomatoes
¤ 2 tablespoons oil to olive
¤ 1 tablespoon Banyuls vinegar
¤ A splash of lemon
¤ salt
¤ pepper
¤ 1 slice of ham
¤ 1 handful of pine nuts
¤ shaved parmesan
¤ chive

Preparation of tomato tartare, crispy ham
1 Peel the tomatoes, cut into small pieces. Put them in a bowl with vinegar, lemon, olive oil, a little chives, salt and pepper (not too much salt).
2 Let marinate and 2 ramekins and fill with tomatoes, tamping a bit. Place in the refrigerator (the freezer to cool quickly or refrigerate if preparing to stay longer).
3 Before serving, toast pine nuts, grilled dry cured ham detailed sticks, cut the Parmesan shavings.
4 Dresser : Invert the ramekins on 2 plates. Overcoming pine nuts and Parmesan shavings and finally sticks grilled ham.
