Preparation : Mix the yeast in warm water and salt and sugar. Then add the melted butter, grated cheese and sifted flour, while stirring with a wooden spoon for the groom to air. Knead on floured table until a soft dough does not stick in their hands. Place in an oiled bowl and cover with a cloth. Let rise until doubled in volume. Remove and knead again, stretching with rolling pin rectangular shaping. Meanwhile, hydrate the mushrooms in white wine or warm water and chop. Also chop the bacon. Roll the dough into a rectangular shape and distribute the filling ingredients on it, also adding the two varieties of cheese. Make a fold in the sides of the rectangle narrower and start rolling. Once rolled, twisting the ends in opposite directions to form a cordon. Wrap in a spiral on itself (just as an ensaimada) and arrange on an oiled plate. Let rise again until doubled in size. Finally, brush with egg and carry moderate oven for 30 ‘or so.
