PAN OF CINNAMON WITH WALNUTS AND RAISINS
(Book “Apprentice Baker”)
-450 grs. of flour strength (I’ve needed something more)
-20 grs. granulated sugar
-9 grs. salt
-6 grs. dry bakery yeast
-4.5 grams. ground cinnamon
-45 g of lightly beaten egg
-30 grs. melted margarine
-120 ml. serum of milk or whole milk
-180 ml. of water at room temperature
-250 grs. washed and drained raisins (for my with fewer raisins is going better.) With less than 200 and continues having many raisin bread)
-115 grs. chopped nuts (you can substitute by hazelnuts or almonds)
Mix the flour, sugar, salt, yeast, and salt in the bowl of the mixer.
Add the egg, margarine, milk and water. Start to knead at low speed until they are amalgam and the ingredients to form a ball. Corrects flour or water if the dough is too sticky or too dry.
Knead for 6 to 8 minutes. A soft and malleable, adherent but not primrose mass should be.
Remove the dough on the floured table and incorporates the drained raisins and nuts, knead until that they are well distributed. I grease a bowl and let the dough covered with oiled cling film until it double its size.
Divide the dough into two equal portions and dales form of bread, place each piece in a greased mold of 21.5 x 11.5 cm. painted surface with melted butter and cubrelas with film loosely. Let stand until the mass exceeds the edges of the mould.
I preheated the oven to 175? with rack in middle position, heat up and down with fan. Put the molds while they touch.
Bake bread 20 minutes giralos 180 degrees so that Cook of is homogeneous and still horneandolos another 20 or 30 minutes (depends on each oven) when cooked esten, sacalas to a grid, paints the surface with butter and sprinkle with sugar mixed with cinnamon.
Let cool a few hours before cutting them and serve them.
In the thermomix (the mia the 21)
Heat liquids with the salt, sugar, butter and cinnamon for 2 or 3 minutes to 50th vel. 1 (that melts butter.)
Add the flour and the yeast. In vel mix. 5 seconds. Add the beaten egg and put vel. spigot 3 or 4 minutes.
Remove the glass and in a bowl or in the table add raisins and nuts. (In the th is crushed too)
