The quiches are almost as famous as the pizzas are so versatile … you can fill with any vegetables you have on hand and will always remain juicy inside and crispy on the outside … take advantage!
Ingredients for four individual ramekins (or a 24-cm)
For the dough:
¤ 150g wholemeal flour
¤ 1 egg
¤ 75 g of butter
¤ 1 pinch of salt
For the filling:
¤ 4 artichokes
¤ 100 g of mushrooms
¤ 3 leeks
¤ 2 eggs
¤ 100 g of Havarti cheese or other fusible
¤ 200 cl of cream
¤ Salt and pepper to taste
¤ 2 tablespoons extra virgin olive oil
Making this recipe for quiche:
Place all dough ingredients in a bowl, mix well, make a ball with the dough, wrap with plastic wrap and leave to cool in the refrigerator about 30 minutes. Peel the artichokes, cut the ends, put them in a bowl with water and lemon. Book.
Clean and cut mushrooms. Clean and cut the leeks (white part only). Put oil in a skillet, saute the leeks, add the artichokes cut very finite, taking a few laps, add mushrooms, saute for about minutes to follow, turn off heat and set aside.
Grease four individual ramekins or large pan with a little olive oil. Cut the dough into four equal pieces. Spread the pieces of dough over the desk and make four circles a little larger than the molds.
Put a circle of dough into each mold, fit well helping hands. Put a few beans into each mold, so that the dough does not rise and put them in a preheated oven at 170 ° C for 10 minutes.Remove pans from oven, being careful not to burn. Spread the filling of vegetables in the four molds. Also to share the cheese.
Beat two eggs, add cream, salt and pepper and divide it into molds. Bake 10 minutes or until they are golden. Remove and serve immediately, accompanied with a good salad.
Note : You can change the vegetables that you prefer or a season there. You can also change the mass of butter with olive oil.
