Ingredients:
Ingredients for 4 people:
-600 Gr. of rice
-400 Gr. ripe tomato
-6 cloves of garlic
-4 large norms 2 Kg. of different kinds of fish (trash, chicken, mullet, gallant or Golden)
-2 DL of olive oil
-6 sprigs of parsley
-Salt
Instructions:
Fry the norms for a few minutes in a cast iron or stainless steel container, remove from the Pan and set aside. In the same oil put below the heads of fish, tomato, and again the maracas norms. Crush in a mortar the garlic, the parsley and the norms. Put to boil the trash in a pot and when it is ready, add the previous dive and leave to cook for half an hour more. Strain the broth incorporate the rest of the fish, clean and desescamado, and cook for 15 minutes. Drain and set aside. Cook the rice in fish broth for fifteen minutes, the rice has to be between dry and soggy. Major the cloves of garlic with the potato, add broth and egg yolk and mix very well. Add the oil slowly while turning. Season with salt. Serve the rice in the pot with the Aioli sauce.
