For a small monkfish, of about 700 g
-Juice of 2 Orange
-75 Gr. almonds
-Virgin olive oil
Make a fish stock with the head of the angler fish, leek, carrot, bay leaf, clove of garlic, splash of white wine and water
Remove the transparent covering of the monkfish tail, cut into slices, go through a little bit of flour and saute a few minutilla in a little oil, remove and set aside.
Chop and cook the onions in the oil that we have rehogado the monkfish, add the chopped almonds (almost flour), give a few laps, add the orange juice, the slices of monkfish and the fish stock to cover, boil all together about 10 minutes until the wine thickens.
