Ingredients for 6 people:
- 1 kg chicken
- 600 g of cooked long grain rice
- 2 peppers roasted or preserved natural
- 200 g of cooked beans or pinto beans
- 4 hard boiled eggs
- 1 jar of white asparagus
- 2 cups mayonnaise
- 200 g of raisins
- Banana fried accompaniment
Preparing the imperial rice recipe:
Prepare chicken as the recipe for chicken fricassee ( see below ) but without putting the potatoes. Allow to cool.
Remove chicken from sauce and bone, chop meat and add to sauce.
Bake in greased pan bottom Pyrex (refractory) half of the rice. Top half of the sauce with chicken, split it, half of the roasted peppers, half of the peas or black beans, half mayonnaise, half of the asparagus and half boiled eggs, deliver the goods.
Repeat the same steps with the remaining ingredients. Put in the oven preheated to 170 ° C for 10-15 minutes.
Remove from oven and pour into a large bowl (you have to look like a cake) I did and presented it in the same Pyrex.
Serve with fried plantains.Chicken Fricassee
Ingredients to four-six people:
- 1 kg chicken
- 2 medium onions
- 4 cloves of garlic
- 1 red pepper
- 250 g of tomatoes crushed
- Salt to taste
- Half a teaspoon of oregano
- Half a teaspoon of paprika
- Half a teaspoon of pepper
- 1 bay leaf
- 100 ml extra virgin olive oil
- 12 olives
- 1 tablespoon capers
- 1 cup white wine
- 100 g of raisins
- 350 ml of water
- Lemon juice
- 8 potatoes
How to prepare the recipe for chicken fricassee:
Cut the chicken into pieces and garnish with lemon juice, garlic, pepper. Heat oil and saute the chicken, add onion, pepper, oregano and bay leaves, stir and let heat. Add the tomato paste and wine.
Add water, paprika and salt. Cook for about twenty minutes.
Add the potatoes cut into boxes, raisins, olives and capers. Simmer 15 minutes or until potatoes are tender. (If you need more water, add little by little, it has to be a sauce neither too thick nor too soupy).
You can add beans or pinto beans, and cooked.
