Introduction:
After the hangover of vacations and the amazing barrage of comments and visits after our last entry (something to which are not used and of course thank you and it is a true joy), back to normality and to our recetitas. Taking advantage of these heats are not doing (at least here in the Canary Islands) and the brand new summer, today we bring you a recipe that we us was very pleasantly surprised: ice cream biscuits and Maltesers. We explain if someone knows them to us: the Maltesers are a malted milk balls, chocolate-coated with milk or white chocolate (in this case we have used of milk chocolate) that are marketed in a few packets of red color and do not have nor colorants, aromas or artificial and they are very light. And for those who do not know (us didn’t it) malted milk is a dairy product made from milk powder, barley malt and wheat flour and used in baking, mainly for the preparation of milkshakes.
It is that the Lady and the Tartufo baby love the Maltesers and that is why from time to time by House round a packet of these delicious balls. So Mr Tartufo thought: and if we do an ice cream with them? Mmmm… it’s a great idea! But, with what can accompany this chocolate, that itself alone would not have too much flavor. We thought therefore accompany them with crackers maria (of life) and the result was wonderful.
In principle, the taste of the cookie ice cream recalls bottles of baby Tartufo, namely those bowls of milk with cookies all us zampábamos when small for breakfast… imagine it turned into ice cream. And the sponsored are which give a different touch and that so deliciously crunchy taste. With this ice cream we have discovered a perfect basis for new elaborations, as well can do ice cream cookies with anything… will be a matter of trial.
Note: on this occasion we have pulled the House through the window and use the day fresh milk and crème fraîche (is a fresh cream resembling the more fat but less bitter and sour cream that is sold in cans type tupper). Maybe the use of these products have influenced the incredible flavor that we have achieved but perfectly normal and cream milk can be replaced. We hope you like it.
Ingredients:
-250 ml fresh milk
-200 ml of crème fraîche
-4 egg yolks
-125 g of Maltesers (and a few more for garnish to taste)
-80 g of Golden Maria biscuits
-100 gr of sugar
-3 tablespoons of invert sugar
-A few drops of vanilla essence
Instructions:
To begin with, as we always have to have introduced the glass from the refrigerator (wrapped in cling film) in the freezer with 24 hours in advance.
We carry out the cream that we will provide the basis for our ice cream. So we put in a saucepan the milk and cream to fire until breaking to a boil so the ingredients are unified. While in another bowl mix the egg yolks with the sugar. We mash crackers. Once the milk has boiled, add the biscuits and stir well until you get a sort of puree. Remove from heat and let rest a minute. Then add the egg yolks and sugar mixture and stir until everything is evenly mixed, again. Let the cream sit for at least 6 hours in the refrigerator.
After this type pour the cream in the refrigerator. We mash the Maltesers and halfway through the process of the ice cream, add them. When you are ready we remove from the glass from the refrigerator and introduce ice cream in a bowl and let stand at least half an hour more in the freezer to take body (although you could also eat). Before eating, it is recommended to remove it from the freezer half an hour before and leave it in the fridge. Add Maltesers integers we had left at the time of serving.
