These green beans with his peculiar taste of curry, are a good accompaniment to meat or fish … or tofu or eggs.
Ingredients for four people:
¤ 400 g of green beans
¤ 3 green onions (scallions)
¤ 4 cloves garlic
¤ 1 teaspoon minced ginger (or grated lemon peel)
¤ 1 teaspoon ground turmeric
¤ 1 tablespoon curry powder
¤ 200 cl of unsweetened coconut milk (or two natural yoghurt)
¤ A sprig of cilantro or parsley
¤ Salt and pepper to taste
¤ Olive oil
How to make the recipe for green beans:
Prepare and wash the onions and garlic and chop into small pieces. To prepare, wash and cut in half the green beans, boil 10 minutes. Put them in a colander, pass them under running cold water and drain.
Saute garlic and onions tender in a pan with some olive oil, add ginger, turmeric, coconut milk, salt and pepper. Let simmer for five minutes.
Incorporate beans, a few laps and garnish with the cilantro.
Note: You can add a few mushrooms or peas … the taste of each one-a.
