This time I prepared the recipe for “financiers” of the book – Pan-Xavier Barriga . It is a very interesting book for those who like making bread, rolls, etc.. at home. In addition to bread recipes, the book has recipes sweet and today I made the financiers … go … what good are delicious.

Ingredients for about 20 financiers (depending on size)

- 75 g ground almonds
- 75 g of cake flour
- 125 g butter, melted
- Brown sugar 180 g powder
- 180 g of white, egg whites (about five eggs)
- Pinch of salt
- 5 g of baking powder

How do financiers recipe:

Mix all ingredients except butter.

Put the butter in a saucepan and melt until a golden color.

Add the melted butter to the mixture and mix the whole five minutes.

Cover the dough with a cloth and let stand in refrigerator at least 25-30 minutes for the yeast begins to take effect. You can even leave in the fridge overnight.

Preheat oven to 175 º C (depending on oven)

Spread batter into oiled molds previously financiers or as in my case in square or round molds. Fill three-quarters of the molds.

Bake 10-12 minutes or until golden brown take.

Note : I had no special molds for financiers and square molds I used to have. Can also be prepared in muffin molds.

Once you have filled molds dough can be sprinkled with chopped nuts, chocolate, pistachios, almonds, etc..
