Now that it’s time to eggplant, will be nice to have recipes for cooking. It can be done in many ways, that of Granada is just one of them. It is an old recipe my mother taught me.
Ingredients: for a mold of 30 × 15 ctms. – 6 people
¤ 5 Eggplant
¤ 2 medium onions
¤ 5 eggs
¤ 150 L. Milk
¤ Olive oil
¤ A little cinnamon or nutmeg
¤ A little pepper
¤ Inca cracker or bread crumbs, chopped
¤ Grated cheese (optional)
How to Prepare cake recipe eggplant pomegranate:
Turn the oven, if electric to 170 degrees. Clean the eggplants and cut into squares. Add salt and wait 1 hour or less (to leave the bitterness). Clean under the tap and let dry.
Cut the onions diced, reserve.
Put in a large skillet cut the eggplants with a little oil and saute. A half done, add onions and salt, is still cook and stir until they are already made. Remove from heat and put in a large bowl. Cool slightly. Add beaten eggs, cinnamon or nutmeg, pepper, milk and stir.
Grease the mold. Pour the preparation into it. Spread over cookie chopped or grated cheese and place into the oven, 1 hour or less. (You can cook in double boiler)
Note: Can be eaten hot or cold, accompanied by fried or steamed potatoes and a salad.
