The creamed vegetables are very easy to do and have lots of vitamins. The pumpkin cream also has many carotenoids.
Ingredients for four people:
¤ 1 kg pumpkin
¤ 2 medium potatoes (optional)
¤ 4 leeks
¤ 2 celery sticks
¤ 4 large green asparagus (optional)
¤ 12 peeled shrimp (optional)
¤ Water
¤ Salt to taste
¤ 4 tablespoons olive oil
¤ Pepper to taste (optional)
¤ Cream (optional)
Peel, clean and cut into squares, pumpkin, celery, potatoes and leeks. Pour the oil in a pot big enough and warm. Pour the chopped ingredients and stir for five minutes.
Add water (up to cover the vegetables) and salt. Boil about 15 minutes. Grind with turmix (the mixer). Clean and chop the asparagus. Add the asparagus in cream sauce and shrimp once the cream is on the plates and add pepper and cream to taste.
Note: This recipe without potatoes is great for people with diabetes and removing the prawns for vegetarians.
