Called celery turnip or celery root.
-2 teaspoons lemon juice
-750 Gr. celeriac
-2 tablespoons Dijon mustard (best ancient)
-1 tablespoon chopped parsley
-ground black pepper
-We put lemon juice in a bowl.
-Peel the celeriac. We cut with thx to the 3 1/2 seconds or so grate with mandolin or grater. It should be into thin strips.
-To cut them, add them to the bowl and mix to prevent rusting.
-Beat the remaining ingredients and add them to the celeriac until everything is well amalgamated.
-Cover and put in the refrigerator at least an hour.
