Introduction:
This is a dish typical of the Lambayeque Department, located in the North of the Peru.
Ingredients:
-1 kilo of duck in dams
-3 tablespoons vegetable oil
-1 cup sour orange juice
-2 tablespoons ground yellow pepper
-3 red onions, cut in the pen
-2 tablespoons of ground garlic
-1 tablespoon of coriander (cilantro) chopped
-1 kilo of cassava
-salt and pepper to taste.
Instructions:
Salt and pepper the duck cut into prey and marinate it with orange juice and chili ground for three hours.
Fry the marinated pato dams until golden brown, add the ground garlic, mix and FRY for two minutes, adding the liquid where the duck is macero, mix well and cover. Cook for 15 minutes over low heat.
Degrease the sauce that remains, check the seasoning, add the onion, put out the fire and cover until the time of serving. Accompany with sancochada Yucca (cooked)
Note: Do not get oranges you sour, use ordinary Orange mixed with juice of lemon juice.
The typical dish is duck but who doesn’t like duck, so it can be prepared with chicken.
