For our part I have found my way to make brown bread and with 50% rye flour. We who are Majorcan not notice the difference from our brown bread with brown bread sold in bakeries … and carries no preservatives …
Ingredients for a comprehensive Mallorcan brown bread:
¤ 300 g rye flour
¤ 300 g of bread flour
¤ 1 teaspoon salt (optional, Mallorcan bread has no salt)
¤ 2 tablespoons extra virgin olive oil
¤ 350 ml of warm water
¤ 25 g of fresh yeast (baker)
How to make brown bread recipe Mallorca:
Putting together the two flours and mix. Add salt if we decide to lay it down, and oil. Put warm water in a bowl and break the yeast, pour the water slowly with yeast to flour and mix-knead until a dough. Check if you need a little more water as some flours absorb more than others. Cover the dough with a tea towel and leave it out of drafts until he has “high”.
Flour a baking sheet. Turn oven to 200 º C
When the dough has risen, pour into the desk, put a little flour and work-kneading and shaping bread round here. Put on floured tray, cover with a cloth and let rise again.
Make a few cuts with a sharp knife and put bread in the oven until golden brown.
Remove bread from oven and let cool on a wire rack.
Note : It is ideal for the famous bread with tomato, sobrasada, etc.
